When cooking in an Electric or Gas oven you should let the oven cycle 3 full times before commencing cooking, this will give you the average ambient internal temperature of 350 ° F.
In this very simple but telling test we took water from a start temperature of 73.9° F to boiling temperature of 212° F.

The results are clear, the Capital Culinarian series Open Burner Range out performed the Bluestar open burner, Dacor sealed burner and the Wolf semi- sealed burner with ease.
NOTE.....All the above tests were carried on on the large burners of each range.
This test was carried out to establish which broiler can produce the highest temperature from the top rack position. The reason I chose the highest rack position was because broiling time should be fast and ideally the food is placed as close to the broiler as possible for searing or melting.

In this test it became apparent the Dacor is seriously underpowered and the Wolf’s highest rack is way too low, the Bluestar has a powerful broiler but was just piped at the post by the Capital Culinarian Broiler. capital-culinarian.com

This test shows the time it takes for the Capital Culinarian burners to boil 1 gallon of water from a standing start of 75° F to a boiling point of 212° F.

In this test we boiled 1 gallon of water (212° F) then added 1 lb. of pasta. We are trying to find the recovery time back to 212° F.

Again the results speak for themselves, the Capital Culinarian Range recovered back to a roiling boil faster than the Wolf or the Dacor after 1 lb of pasta was added to the stock pot.
Overall the Capital Culinarian range beats the Bluestar, Wolf and Dacor by nearly 4 minutes on the Bluestar and 8 minutes on the other two. Could we all wait a 4 or 8 minutes for pasta to be ready for the kids? Sure we could, but we don't have to with the Capital Culinarian Range or Cooktop.

In this test I try to show how efficient the Open Burners are, and how inefficient Sealed Burners are. I used the mid size burners on the Capital, Bluestar and Dacor and the high burner on the Wolf, so the Btu ‘s were matched as close as possible.

Test Kit
In this test I show that direct heat and superior power to the base of the Wok makes a huge difference, whilst I can not show you the actual wok cooking in a test I can show the amount of heat that is directed to the base of the Wok.
I racked my brain for days trying to come up with a comparison test that show the actual heat to the pan. In the end I came up with putting 1/4 cup of water in a 16” Wok then turning the burner full. I recored the amount of time it took for the water to evaporate completely.
One of the most impressive areas of this test is the temperature of the handle after 3 mins

Overall Result
All the cookies looked very evenly cooked on the top from back to front and side to side. The Wolf cookies were slightly darker. The Capital, Bluestar and Dacor cookies all looked very similar. When it comes to the underside that’s a different story, the Wolf Cookies were noticeably darker and in my opinion a little overdone.
From a score perspective I give the Capital, Bluestar and Dacor joint first with Wolf second due to the underside.
In this test I was looking to find out the temperature of the wok handle after having the burner on full for 3 mins.
The results below reflect a major safety issue. The Capital handle after test was remarkably cool and easy to touch and lift without protection. Where as the other ranges could result in skin burns..............
